Delicious Muffins (Gluten Free + Dairy Free)

Ingredients

  • 2 cups Bobs Red Mill gluten free 1 to 1 flour (296g)
  • 3 teaspoons baking powder (14.4g)
  • ½ teaspoon salt
  • ¾ cup white sugar (168g)
  • 1 egg
  • 1 cup almond, oat or other dairy free milk (240ml)
  • ¼ cup vegetable oil (60g)

Instructions

  1. Preheat the oven to 400 degrees F.
  2. Spray 12-cup muffin tin with avocado oil or whatever you have
  3. Bowl 1: Stir flour, baking powder, salt, and sugar together in a large bowl; make a well in the center.
  4. Bowl 2: Beat egg with a fork in a small bowl or 2-cup measuring cup; whisk in milk and oil.
  5. Pour egg mixture all at once into flour mixture; mix quickly and lightly with a fork until just moistened. Do not over mix, keep the batter lumpy.
  6. Spoon batter into the prepared muffin cups, filling each 3/4 full.
  7. Add blueberries, strawberries, raspberries or any fruit that you'd like once the muffins are poured.
  8. Bake in the preheated oven until tops spring back when lightly pressed, about 20-25 minutes.
